Configure audio codec settings to your liking. Here you want to select "None" as video source and your preferred audio device as audio source.

In "Screen recorder" tab you can press "Screen recording options." button for all the recording settings.

Also if you went with pre configured region, modify it here so it's at least 5x5 pixels and place it anywhere you like.

In "Capture" tab make sure to check "Override capture settings".

Note that sharex will not start recording if region is smaller than 5x5 pixels, because of that you will still have to select some region and see recording UI on screen during recording even though you are not recording any video. Put something sensible in the "Description" field to make it obvious it's a sound-only recording, Description shows up in "Workflows" menu.

I'd suggest screen recording using pre configured regin.
